I personally love beetroot! It just works for everything because of it’s naturally sweet flavor, so you can successfully use it for both sweet and salty cooking. Not to mention, beetroot is packed with vitamin C, iron and magnesium and is really good for you. I also love that beetroot adds some pretty color to a dish, is easy to camouflage so that your kids will love it!
Ingredients: (Serves 1-2)
1/4 cup / 1/2 deciliter of almond milk
1/2 tsp vanilla bean powder
1/2 tsp salt
1 1/2 tsp baking powder
1 tsp melted coconut oil (neutral flavor)
1 cup / 2 deciliters of gluten free oats
3 tbsp finely shredded raw beetroot
2 tsp agave (optional)
1 tsp psyllium husk
Heat up your waffle maker. Add the oats to a blender and blend until the oats turn into oat flour. Whisk the eggs and milk in a bowl and add the rest of the ingredients – the psyllium husk last. Whisk thoroughly. Then grease your waffle maker and add the batter.
Top it off with whatever you like: Agave, nuts, fruits etc. Enjoy!
