Baking really doesn’t have to be hard or expensive, even when eating gluten free og paleo friendly. Once you have a few basic ingredients, you’re good to go, and you use so little each time that you won’t have to buy new basics for a while! Things like coconut oil, coconut fibers, chia seeds, nuts and almond milk are ingredients that are always good to keep around.
This banana bread recipe is real simple and quick to make, it’s moist and filling and so delicious for a quick snack or treat when needed!
1 large ripe banana
1/4 cup / 1/2 deciliter of almond milk
1 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla bean powder
3 tbsp coconut oil
3 tbsp chia gel
4 tbsp coconut fibers
40 grams of chopped dark chocolate (optional)*
Add banana, eggs, vanilla, almond milk, salt and melted coconut oil to a blender and blend well. Then transfer the mix to a bowl and stir in coconut fibers, chia gel and chopped dark chocolate. Grease a small bread container and bake at 350 F / 175 C for about 25 minutes. Once you can stick a fork in the banana bread and it comes out clean, the bread is done.
*Tip: You can easily replace the chocolate with nuts if you prefer. Or go with both!
