Cranberry-liquorice cookies

I  love liquorice! It’s a Danish thing.. my husband hates it. However, I never thought that liquorice would be good in cookies. A few years ago I tried the recipe from Markus Grigo which was absolutely delicious! Probably my favorite cookies. But also absolutely unhealthy! So I decided to try to develop a healthier version and so I did. If you love liquorice, give them a try! They are delish!

Ingredients: (Makes about 20 cookies)

1 cup / 2 deciliters of oats

1/2 cup / 1 deciliter of almond flour

1 egg

10 dates

3 tsp liquorice powder

3 large tbsp neutral coconut oil (melted)

1 tsp baking powder

1 tbsp cornstarch

5 tbsp of dried cranberries


Put the oats in a blender and blend until it turns to flour. Transfer to a separate bowl. Then add the dates to the blender with the egg and melted coconut oil. Blend until smooth. Mix all the ingredients together thoroughly with a spoon. Shape the dough into little balls and put on a baking tray covered with parchment paper. Flatten the balls with your hands or a spoon. Then bake at 350 F / 175 C for about 20 minutes. Watch the cookies to make sure they don’t burn.
