It’s apple season everyone!! So today was spent picking apples at the park with the family, and of course that means apple cake! So my daughter helped me out in the kitchen and we made apple cake, apple muffins and lots of apple sauce! I’m so excited to share this recipe with you all as it’s definitely one of my favorites! It’s great as a guilt-free dessert or as a healthy treat in the kids’ lunch box. Everything went so fast today that I may actually have to make a new batch tomorrow!
Ingredients: (makes one cake or about 10 muffins)
2 large organic eggs
10 pitted dates
1/2 cup / 1 deciliter of vegan yoghurt
1-2 tbsp agave
2 tbsp coconut oil (neutral flavor)
1 large apple
1 1/4 cup / 100 grams of old-fashioned oats
2 tsp cinnamon
1 1/2 tsp baking powder
2 tsp psyllium husk
Start by blending the oats until they turn to oat flour. Then transfer to a separate bowl. Put the dates in the blender and add the yoghurt. Blend until smooth. Add the rest of the wet ingredients to the date mix and stir well. Peel the apple and finely shred it. Save a little bit to make thin apple slices to decorate your cake. Add the shredded apple to the wet ingredients and stir. Mix the oat flour with the rest of the dry ingredients before combining with the date mixture. Stir it all well and add to a cake tray or muffin tray. Decorate with thin apple slices and sprinkle with a little cinnamon. Bake for about 25 minutes at 350 F / 175 C.
