Peanutbutter-chia breakfast bars

I love breakfast bars! I could eat them all day! I did make these for my husband though to take with him when he leaves the house as a snack. He’s diabetic so he needs something quick to eat to make sure his blood sugars don’t drop. I could have bought some at the store yes, but honestly it’s so easy to just make them myself. I see no reason to buy bars with 100 different ingredients including loads of sugar, when it literally takes 10 minutes to make your own healthy version.

Breakfast bars can be made in so many ways. These are a no-bake version – it saves on the electricity bill and makes the process a little easier. I used peanutbutter and chia seeds to add extra protein and healthy fats which help keep your blood sugars stable.

Ingredients: (makes 8 bars)

15 pitted dates

1/4 cup / 1/2 deciliter of water

1 1/2 cup / 3 deciliters of quick oats

1/4 cup / 1/2 deciliter of chia seeds

4 large tbsp of natural peanutbutter

A pinch of salt

Directions:

Blend the dates with the water until it turns into a smooth paste. Transfer to a bowl. Simply add the rest of the ingredients and mix well. Then grab a tray covered with parchment paper and press the mix down with your hands. I generally use a spatula to make sure it’s smooth and pressed down tight. Then put the tray in the fridge for a little while before you take it out and cut it into bars. You can melt a little 70-80 % chocolate to sprinkle on top if you like.
