So the other day it was my husband’s birthday and he actually made the request of a vegan and sugar free cake believe it or not (I did ask him several times to verify that I heard him right!) So I had to get creative in the kitchen. He loves brownies and he eats peanutbutter every day as a treat so why not combine the two.
These brownies were absolutely delicious if I should say so myself! My two sisters came over just in time for the cake-testing, and the entire batch was gone only a few hours after it was served. So I would say I wasn’t the only fan!

7 tbsp of water
2 flax eggs*
1/2 cup / 1 deciliter of natural peanutbutter (I used crunchy)*
1/3 cup / 1/2 deciliter of melted coconut oil (neutral flavor)
1 cup / 2 deciliters of almond flour
1/4 cup / 1/2 deciliter of coconut sugar
1/4 cup / 1/2 deciliter of cocoa powder or raw cacao
1 1/2 tsp of baking powder
1/2 tsp of salt
1 tsp vanilla bean powder
50 grams of chopped dark chocolate (I used 70%)
3 tsp of psyllium husk
6 tbsp of natural peanutbutter
2 tbsp agave
1/2 tbsp melted coconut oil (neutral flavor)
2 tbsp of cocoa powder or raw cacao
Blend the dates with the water. In a separate bowl, mix the peanutbutter with the melted coconut oil. Add the flax eggs and blended dates and stir. Add the rest of the ingredients and stir well. Put the brownie batter in a baking tray covered with parchment paper or greased with coconut oil and bake for 20-25 minutes at 350 F/175 C.
Once the brownies have cooled off, mix all the ingredients for the frosting and spread on top of the brownies.
* Flax eggs: Simply mix two tbsp of flax seeds with 7 tbsp of water. Let sit for 10 minutes and it’s ready to use. One “egg” equals 1 tbsp of flax and 3-4 tbsp of water.
*Tip: I used crunchy peanutbutter only for the recipe, but if you prefer you can of course use creamy. Or crunchy for the cake and creamy for the frosting. Make sure you are using natural peanutbutter though! You’d be surprised how maný brands actually contain sugar and other unnecessary ingredients.Follow me on social media:
