We are approaching Christmas and cinnamon is on the menu here every day! I don’t care if it’s on my morning oatmeal or as a little extra spice to some hot cocoa at night. I gotta have my cinnamon this time of year!
I made a huge batch of these delicious cinnamony pancakes recently to freeze in portion sizes as a small snack, for the lunch box or as a quick breakfast for the kids. The kids (and myself) ended up eating most of them though before they actually went in the freezer. But that just means I have to make them again soon, and I know my kids would be okay with that too! Here comes the recipe:
175 grams of spelt flour
1/2 tsp of salt
2 tsp baking powder
2 tsp cinnamon
2/3 cup / 1 1/2 deciliter of unsweeyened apple sauce
1 1/4 cup / 2 1/2 deciliter of almond milk
1 egg (optional)
Coconut oil for frying
Mix the dry ingredients and add the rest. Mix well with a hand mixer. Fry the pancakes in coconut oil.
