My son and I got started on the Christmas candy today! I really tried my best to wait till December to start, even though I’ve been in the Christmas spirit since end of October. So I did finish the Christmas decorations in November but the rest had to wait.
So today we made raw, vegan bounty bars (or I guess they were almost raw – we did use melted chocolate, but close enough right?) Anyways, this recipe is of course refined sugar free and gluten free, so your kids can eat the bars too without the sugar high that normally characterizes all of December…
Also, they are very quick and easy to make, only with a few ingredients that you might already have in your pantry.
Ingredients: (Makes about 10 bars)
150 grams of shredded coconut
150 grams of coconut milk
3 tbsp of agave
4 tbsp of coconut oil
1 1/2 tbsp of coconut fibers
Chocolate for coating (I used 80 % dark chocolate)
Basically just add all the ingredients to a bowl and mix well using your hands. Shape into about 10 bars and store the bars in the fridge for about an hour. Then use a brush to coat the bars with melted chocolate and put them back in the fridge to dry.
