Quinoa is protein filled and delicious! It’s great in salads, as a rice substitute, as the main ingredient in veggie patties or even desserts. I definitely feel like quinoa should be a stable in every kitchen, vegan or not.
This dessert is both vegan, healthy and sweet. Try it as a little christmas treat or even breakfast. Your kids will love it!
1 deciliter / 1/2 cup of quinoa
4 deciliters / 2 cups of almond milk
0.75 deciliter / 1/3 cup of freshly squeezed orange juice
2-3 tbsp of coconut sugar
1/2 tsp of vanilla bean powder
1/2 tsp of almond extract
1/2 tsp of salt
1/2 deciliter / 1/4 cup of chopped almonds
First, rinse off the quinoa. Transfer to a pot and add the rest of the ingredients except the almonds. Bring to a boil while stirring and cover with a lid while the pudding simmers on low for about 20-25 minutes depending on how you want the texture. When done, stir in the almonds, sprinkle with cinnamon and serve.
